It looks like a long list of ingredients but feel free to substitute for different vegetables or herbs. You can also prep these ingredients and add them to meal prep containers so you have a nice filling meal for lunches for the week!

My Trip to Iowa

I recently had the amazing opportunity to visit Des Moines, Iowa and visit a soybean farm as well as visit the World Food Prize Hall of Laureates and visit the National Pork Board where we learned all about soybeans and we even cooked together!

I learned so much, especially at the World Food Prize. Did you know the World Food Foundation awards a prize for people who help to fight world hunger and bring us forward and innovate in food and agriculture? The World Food Prize is given out by the World Food Prize Foundation and it's located in Des Moines.

Talking to Farmers

Have you visited a farm before? If not, I highly recommend that you do visit at least one. If you have a kid, bring your kid too. We have so much to learn from our nation's farmers and we have so much to be grateful for.

Farmers feed us all. Whether you buy organic produce or not, your purchases affect family farms across this country and the world. Did you know that 97% of farms in the United States are family owned and operated?

That number was astounding to me and I wish more people knew this.

I'm grateful that I have had the opportunity to visit farms over the years because of what I do here on The Little Kitchen. From Maryland to Iowa, to Idaho to California and Minnesota and more, I always find it so awe-inspiring when I meet a farmer.

All of the farmers I have met care about these things:

  • sustainability – actually farmers practiced sustainability even before it became a buzz word. Why? Because they care about leaving the land to the next generation and beyond so they can raise more crops and livestock on that same land.
  • most farms I have visited span generations, that means the farms have been in the family for generations. It's all in the family!
  • profitability – oh my goodness, I know this might sound funny but it needs to be profitable. Think about any business that is run, if it doesn't turn a profit and it's not sustainable for the people who run it, it will go out of business. The same thing can happen with farms. Economics are also a key part of sustainability.
  • they care about what they grow because they feed it to their children. Farmers often live right next to or right on the land they are farming. What they use in the soil and what they spray on the crops needs to be safe for their kids too.

Sustainability is a way of life for farmers.

Facts about Soybeans

  • Edamame is a green soybean, harvested while they are still unripe.
  • Edamame is usually served steamed.
  • Yellow soybeans are dried soybeans.
  • Soybeans are nutrient dense and is a sustainable crop.
  • Soybeans are 80% meal and 20% oil.
  • The oil is used to make what we know as vegetable oil. But it's also used as a biofuel.
  • 97% of the meal from soybeans are used to feed animals like pigs and chickens on farms.
  • The rest of the 3% are used in food, such as, edamame, tofu, soy sauce and soy milk.

I'm Vietnamese-American and I grew up eating tofu and soy sauce. Some people think that tofu is just for vegetarians and vegans but that's not true. I love tofu and I'm a meat eater.

My Mom would often cook tofu along with meat in the same dish. Of course, I use soy sauce in a lot of my cooking and I'm always using it at sushi restaurants. And I love that I can easily find edamame at my grocery store in the freezer section.

How to Make a Tofu Noodle Bowl

This tofu noodle bowl reminds me of a Vietnamese spring roll but all in a bowl, complete with the peanut sauce!

Press the tofu to remove excess moisture.

After pressing it, you can see the liquid that's removed!

Dry it with a paper towel and then cut into cubes. Then, mix it in your cornstarch mixture.

Follow the instructions on the frozen edamame to prepare it in the microwave. I love how fast and easy it is to prepare!

I love making air fried tofu! Instructions on how to make these on my air fried tofu recipe.

Prep all of your veggies just like you're about to make a spring roll. Make your peanut dressing which is similar to my Mom's peanut sauce recipe but I tweaked it so it's more like a salad dressing.

Tofu Noodle Bowl

Servings 4

Ingredients

  • 14 ounces firm tofu
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon onion powder

Peanut Dressing

  • 1/2 cup creamy peanut butter
  • 2 teaspoons hoisin sauce
  • 1 clove garlic
  • 1/2 teaspoon granulated sugar
  • 1/8 teaspoon cayenne pepper optional
  • 1/2 Tablespoon vegetable oil
  • 1/2 teaspoon sesame oil
  • 2/3 cup water may need more or less depending on the consistency of your peanut butter

To Assemble

  • 1/2 package rice noodles cooked according to package instructions
  • 12 ounces edamame
  • 1/2 cucumber sliced
  • lettuce sliced thin
  • 1 avocado sliced
  • shredded carrots
  • cilantro for garnish
  • chopped peanuts for garnish

Instructions

  • Remove tofu from packaging and press to remove excess moisture using a tofu press or placed between a plate and a cookie sheet (add canned foods for weight and pressure for pressing). Press for 20 minutes.
  • Pat tofu dry and cut into cubes.
  • In a shallow dish, mix together cornstarch, salt, pepper, garlic powder and onion powder together.
  • Add tofu cubes and mix together.
  • Make the peanut sauce by adding the ingredients together into a medium sized bowl and whisk together. You may need more or less water depending on the consistency of your peanut butter. Set aside.
  • Prep your vegetables for your bowl. Steam the frozen edamame according to the package instructions.
  • Cook the tofu in a heated skillet with a layer of vegetable oil on medium high heat. Cook for 3 to 4 minutes on each side. Or cook them in an air fryer using my air fryer tofu recipe.
  • Assemble the noodle bowl with rice noodles, lettuce, tofu, edamame, shredded carrots and avocado. Top bowls with cilantro and chopped peanuts. Serve with peanut dressing on the side.

Grinder Sandwich (TikTok Viral Salad Sandwich)

Ingredients

Grinder Salad Dressing

  • 1/4 red onion thinly sliced
  • 1/3 cup mayonnaise
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon Italian seasoning I used Penzey's frozen pizza seasoning
  • 1 to 2 Tablespoons banana peppers chopped with juice
  • 4 to 5 cloves minced garlic
  • dash crushed red pepper optional
  • salt
  • pepper
  • 1/4 to 1/3 head iceberg lettuce sliced

Grinder Sandwich

  • 2 to 3 sub rolls
  • sliced ham
  • salami
  • Munster cheese
  • 1 tomato sliced
  • grated Parmesan cheese

Instructions

Grinder Salad Dressing

  • Slice your red onion and place in a small bowl with cold water. Set aside.
  • In a medium-sized mixing bowl, add mayo, red wine vinegar and Italian seasoning.
  • Remove onions from water and allow to drain.
  • Add the onions, banana peppers, garlic and crushed red pepper, if you're using. Mix together and then add salt and pepper and mix again.
  • Add lettuce and mix together. (If you're making this a day ahead of time, don't mix the lettuce in until you're ready to serve.)

Grinder Sandwich Assembly

  • Turn your oven on to the broiler setting.
  • Cut into your sub rolls and place on a lined baking dish.
  • Add ham and then salami to your sub rolls. Then, add the Munster cheese.
  • Place in the oven until the cheese has melted and is bubbly, about 1 to 3 minutes. Be careful and don't burn your bread!
  • Add sliced tomatoes on top and then season the tomatoes with salt and pepper.
  • Scoop the mixed grinder salad dressing on top of the sandwich and then add the Parmesan cheese.
  • Close the sub roll up and cut in half and serve immediately.

These little chicken banh mi sliders are the perfect little meal for when you're wanting to try something different but also make a quick one!

Banh mi sliders are just little mini banh mis! The lemongrass chicken is super flavorful and just like how my Vietnamese mom makes it! I can't wait for you to try this!

What is a banh mi?

Did you know that banh mi translates to bread in Vietnamese? I see the words banh mi sandwich on menus all the time and it makes me chuckle out loud. Because they are literally saying bread sandwich. Doesn't that make you laugh too?

Banh mi is usually a baguette with Vietnamese cold cuts along with a butter mayo or even a pâté spread along with sliced cucumber, picked vegetables, cilantro, and sliced jalapeño on top.

What is a banh mi slider?

A banh mi slider is just a mini version of a banh mi (sandwich haha) and to make this recipe super easy, I'm using Rhodes Warm & Serve Artisan French Rolls. They warm up in the oven so quickly and they are the perfect rolls to make banh mi sliders.

We can talk about how much I love bread until the cows come home. But I do need to tell you how obsessed I am with these Rhodes Warm & Serve Artisan French Rolls. They are sooo good!

You can find these Rhodes Warm & Serve Rolls in the freezer section at Walmart and Publix.

They heat up in the oven fairly and on the back of the bag it says if you like softer tops on the rolls, then you want to brush on melted butter. You definitely want to do that for this recipe!

How to make chicken banh mi sliders

First, you're making the quick pickled carrots and daikon and putting it in the refrigerator. I'm excited to say that these is my Mom's recipe and it's EASY to make!

Prep the chicken and then add the marinade ingredients: garlic, oyster sauce, sesame oil, lemongrass, salt, and pepper. Mix together to make sure the chicken is completely covered and set aside for 10 to 15 minutes.

Heat up the skillet and then cook the chicken on each side for 5 to 7 minutes.

After you get a nice sear on both sides, I put the pan in the oven for a few minutes to ensure the chicken is cooked all the way through. You may need to have it stay in the oven longer if your chicken thighs are pretty thick.

Now it's time for those buttered rolls to go into the oven.

Always let meat rest before cutting. I usually let it rest 6 to 10 minutes.

Now set up your banh mi slider making station. So it's easy to assemble.

Once they come out of the oven, I let them cool for a few minutes and then slice them in half but not all the way!

Chicken Banh Mi Sliders

Servings 6 mini sandwiches

Ingredients

Quick Pickled Carrots and Daikon

  • 2 Tablespoons distilled white vinegar
  • 1/4 cup water
  • 1 teaspoons sugar
  • 1 pinch salt
  • 1/2 cup carrots cut into matchsticks
  • 1/2 cup daikon radish cut into matchsticks

Chicken Banh Mi Sliders

  • 8 Rhodes Warm & Serve Artisan French Rolls
  • 2 Tablespoons melted butter
  • 1.25 pounds boneless, skinless chicken thighs
  • 4 cloves garlic peeled and minced
  • 1/4 cup oyster sauce
  • 2 teaspoons sesame oil
  • 1 Tablespoon fresh or frozen lemongrass chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • grape seed or canola oil
  • cilantro
  • 1/2 cucumber sliced thin
  • 1/2 jalapeño sliced thin
  • mayo

Instructions

Quick Pickled Carrots and Daikon

  • Combine vinegar, water, sugar and salt in a medium-sized mixing bowl and mix until the sugar and salt has dissolved. Add carrots and daikon and cover and set aside in the refrigerator for at least 2 hours.
  • Heat oven to 375° F.
  • Trim fat off chicken thighs. Use a fork to poke holes on each side of each piece of chicken thigh. Add to a small shallow dish.
  • Add garlic, oyster sauce, sesame oil, lemongrass, salt, and pepper on top of chicken. Mix thoroughly. Allow chicken to marinate for 10 to 15 minutes.
  • Add 2 teaspoons oil to a nonstick skillet and heat for 3 to 4 minutes. Cook chicken on medium high for 5 to 7 minutes on each side.
  • Place pan with chicken in the oven for 4 to 6 minutes. Remove the chicken from the oven and the pan and place on a clean plate. Allow the chicken to rest for 6 to 8 minutes before cutting into it.
  • Lower oven to 350 degrees. Brush melted butter on the top of each Rhodes Warm & Serve Artisan French Rolls and bake as directed on packaging.
  • Remove from oven, allow to cool for at least 5 to 10 minutes.
  • Assemble the banh mi sliders. Cut each French roll in half and spread mayo on the bottom. Add chicken, then layer with pickled carrot and daikon, cucumber, cilantro and jalapeno. Serve immediately.

It's actually really really easy to make pizza using frozen dough. All you have to do is defrost it and roll it out and bake in an outdoor pizza oven or in the oven in your kitchen!

Ingredients

  • 1 Loaf of Rhodes Bake n Serve White Bread
  • Pizza Sauce
  • fresh Mozzarella cheese
  • Italian seasoning
  • Pepperoni
  • Any of your favorite pizza toppings!

How to make Pizza with an Ooni Pizza Oven using Rhodes Frozen Dough

Just take one loaf of Rhodes Bake n Serve White Bread and put it inside a plastic zip-top and allow to defrost for a couple of hours on your kitchen counter.

Once the frozen dough has defrosted, cut into two or three pieces and roll each piece into a ball. You're going to want to let this dough sit for about another hour.

While that's happening, you want to turn on or start heating your Ooni pizza oven!

After the dough has rested, start rolling it out with a rolling pin to the thickness that you like.

Add sauce, cheese, Italian seasoning and your favorite toppings. We love pepperoni!

Make sure to turn the pizza every 20 to 30 seconds so it cooks evenly!

Pizza Recipe Using Frozen Dough

Prep Time 20 minutes
Cook Time 5 minutes
Defrost Time 2 hours
Total Time 2 hours

Ingredients

Instructions

  • Take one loaf from the bag of frozen Rhodes White Bread. Place in a zip top bag and allow to thaw for 2 to 3 hours.
  • Cut the loaf into 2 or 3 even pieces. Cover and allow the dough to sit for another hour.
  • Follow instructions to turn on or heat up your Ooni oven. (You usually need to preheat it for 20 to 30 minutes.)
  • Light dust a marble pastry board with flour. Roll each dough ball out into a 10 inch circle or square. (You might need to roll it a little and then allow it to rest for rolling it out to the desired size.)
  • Add flour to a pizza peel and place the dough on top. Add sauce, cheese, Italian seasoning and pepperoni (or whatever toppings you'd like to add).
  • Shake the pizza peel to make sure the pizza dough isn't sticking to it.
  • Using pizza peel, place pizza on baking stone in the Ooni oven. Close the lid. Rotate the pizza every 30 seconds. It only takes a couple of minutes and your pizza is done!
  • Remove the pizza from the Ooni pizza oven and let it sit for a few minutes before slicing.

This bacon-wrapped shrimp recipe is definitely one to save and make over and over again. The flavor combination of shrimp wrapped in bacon and brushed with butter, brown sugar, and maple syrup glaze is just amazing! What is bacon-wrapped shrimp?

This is an easy-to-make dish that can be baked, fried, or sauteed. In this case, shrimps wrapped in bacon and held together with a toothpick are cooked in the air fryer. After they're cooked, the shrimp are covered with a butter and sugar glaze and sprinkled with chopped parsley. They are best eaten hot!

What does wrapping meat in bacon do?

When meat is wrapped in bacon and cooked together, the fat and flavor from the bacon soaks into the meat and creates incredibly flavorful and tender meat. Bacon-wrapped shrimps are one of the best combinations! 

Should you leave the shrimp tails on?

It's a good idea to keep the shrimp tails on so you have something to hold onto when eating them. If you'd rather just use the toothpick that was used to hold the shrimp and bacon together, you can remove the tails. This also prevents you from having a plate of piled-up shrimp tails on the counter.

Air fryer bacon wrapped shrimp are delicious little bites of salty, shrimpy goodness. Here are some tips and variations that you’ll find useful in making them. 

  • These shrimp are wrapped in bacon and then put in the air fryer in one seamless step. Other bacon wrapped shrimp recipes say to cook it in two steps. Make sure the shrimp don’t overcook by slightly cooking the bacon before wrapping the shrimp and then finish cooking in the air fryer. Even though this is an extra step, it will make sure the shrimp are perfectly cooked. 
  • You can wrap bacon around all kinds of different foods. Some great options are meatloaf, dates, jalapenos, and asparagus. 
  • This recipe uses the air fryer but there are other cooking methods you can use. Grilled bacon wrapped shrimp have a smoky flavor or you can bake them in the oven if the grill isn’t an option.

How to make bacon-wrapped shrimp:

These little two-bite appetizers are easy to make. Here are the steps you'll need.

Make the glaze: Start by first making the glaze to brush on top of the shrimp before and after they cook.

Wrap the shrimp: Wrap one-third piece of bacon around one piece of shrimp and secure it with a toothpick. Brush all the shrimp with the glaze.

Preheat the air fryer: Heat the air fryer so the shrimp are ready to go in when you're done brushing with the glaze.

Cook the shrimp: Place the shrimp in the air fryer and cook. Halfway through, turn the shrimp over.

Serve: Remove the shrimp from the air fryer, brush with the rest of the glaze, sprinkle chopped parsley over the tops, and serve.

Bacon Wrapped Shrimp

Equipment

  • Air Fryer

Ingredients

  • 3 Tablespoons butter
  • 2 teaspoons brown sugar
  • 2 Tablespoons maple syrup
  • 16 raw shrimp 25/30 size
  • 6 bacon slices sliced into thirds
  • parsley for serving

Instructions

  • Brown butter on the stove then add light brown sugar and then set it aside.
  • Prep the shrimp. Cut the bacon into thirds and then wrap one-third piece around one piece of shrimp.
  • Preheat the air fryer to 380 degrees. 
  • Mix the maple syrup into the brown butter mixture. Split into two bowls. Take one bowl of glaze and brush it onto both sides of the bacon-wrapped shrimp.
  • Place the shrimp into the air fryer and cook for 8 to 10 minutes, flipping halfway through and adding more glaze from the second bowl.
  • Sprinkle chopped parsley on top and enjoy!

I have always loved thumbprint cookies and I love this little mix for Valentine's Day, don't you?

If you don't want to do the heart-shaped thumbprint, you can always just use a spoon to add the “thumbprint” shape before adding your jam.

  • unbleached all-purpose flour
  • baking powder
  • unsalted butter
  • granulated sugar
  • extra large egg
  • pure vanilla extract
  • strawberry jam or orange marmalade
  • powdered sugar

How to add the heart-shaped thumbprint in these thumbprint cookies

Use the end of a curved butter knife to make the heart shape. Spray it with baking spray if needed. Place the knife standing up to make the left side of the heart and then the other side.

I find that if you let the dough balls sit for a few minutes after rolling them into balls, it takes less baking spray.

These thumbprint cookies have the perfect amount of sweetness and you won't be able to eat just one, I know it!

Thumbprint Cookies

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 35 minutes
Servings 24 cookies

Ingredients

  • 1 cup unbleached all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter room temperature
  • 1/3 cup granulated sugar
  • 1 extra large egg beaten
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup strawberry jam or orange marmalade

Glaze

  • 1/2 cup powdered sugar
  • 3 teaspoons water
  • 1/2 teaspoon pure vanilla extract

Instructions

  • Heat oven to 350°F .
  • In a small mixing bowl, mix together flour and baking powder. Set aside.
  • Add butter and both sugars to a large mixing bowl. Using an electric hand mixer, cream the sugars and butter together until light and fluffy. Add egg and vanilla extract and continue mixing until completely combined.
  • Add half of the flour mixture to the butter mixture, mix with a rubber spatula being careful to not over mix. Add the remaining flour and mix. You'll notice a cookie dough will form.
  • Use a small cookie scoop (2 teaspoon size), scoop the dough and roll into a ball using your hands. Place on a silicon mat lined or parchment paper-lined cookie sheet, about 1 inch apart.
  • Use the end of a clean, rounded butter knife to make the heart-shaped “thumbprint” on each cookie. Add about 1/4 teaspoon of jam or marmalade to each cookie. 
  • Bake for 10 to 11 minutes at 350°F. Place the cookies on a cooling rack.

Make the glaze

  • Whisk the glaze ingredients together in a small mixing bowl.
  • You can use a spoon or you can add glaze into a zippered plastic bag and cut out a very small hole in one of the corners of the bag.
  • Drizzle the glaze over the cookies to your liking.

Notes

If you want, add a couple drops of pink icing color to the glaze and mix before drizzling like I did.
