We have made this recipe over 20 times – we love it! A few notes:

• After the first time making it, we realized that forming it into nests wasn’t a good idea. They dried before we unraveled it and they were a clumpy mess. Now we have a pasta rack (pictured) and it works perfectly! We even used clothes hangers before we had the pasta rack and those worked fine too.
• We typically have to add more water after we mix it. I’d say we use anywhere from 1-3 extra TB of water depending on how the dough feels.
• Most times the dough doesn’t come together with the KitchenAid dough hook. It can be very crumbly. We have to knead it by hand for a while longer until the dough forms.
• Otherwise, we follow the recipe to a T! We do the sheet roller as listed and cook it for about 5 minutes when it’s done.

We’ve made this recipe in different kitchens – even different states! We do notice a slight difference in the dough depending on where we make it, so we just feel it out as we go. Sometimes it feels like the dough won’t work and want to give up, but we always keep working and kneading and it ALWAYS turns out! You will love 🙂 thanks for the recipe!

I added a bit of olive oil but other than that your recipe and. Ideo were perfect. I used the pasta dough to make lasagna for a volunteer organization I’m a part of. Thank you. FYI, I don’t boil the pasta sheets before assembling the lasagna. They cook beautifully while the lasagna bakes in the oven!

I made egg noodles for the very first time. Your video details made it seem so simple and it was. I just got some semolina flour to use, but the dusting flour I used my regular flour. Very easy to make, and my husband just loved the taste and texture of the pasta. I am gluten intolerant, so was unable to eat it, but he loved it and that’s what counts!
