Thank you so much! My friend’s daughter asked me for a rainbow cake with sprinkles for her 5th birthday. I was daunted by the idea of a seven layer cake, and she was only having a small party. A quick image search brought me to this recipe, and it was perfect! I cut it in half before frosting and used a multipack of single-color sprinkles to make a rainbow on the outside, too, with marshmallow clouds at either end (the other half went to her party at daycare). It didn’t rise as high as the example, and the arch wasn’t perfect, but it was delicious and she loved it!

I made this as a Bundt cake for church and it was a hit, especially with the kids! It was delicious and moist!
I also made it in cupcakes for my family. The cupcakes were A LOT of work to make, but totally worth it! (If you do this, pipe each layer from the outside, then with the back of a teaspoon, gently spread the batter toward the middle to cover the layer.)
The cupcakes were even more moist than the Bundt cake was! Delicious!
For the icing, I used half and half instead of milk and thought it was much better.

Hi Laura,

I’d say it looks pretty amazing! I would just make sure that each color is divided evenly and make sure to flatten and spread out each layer with an angled spatula or butter knife. I measure out the batter between the bowls using a 1/4 cup measuring cup and then do it by tablespoon measuring spoon so I know that each color will be pretty close to even. I hope that helps!
