These were really good! I used bottled lime juice and I thought the lime flavor came out just fine. My only wish is that they tasted a bit more coconut-y. I got the texture of the shredded coconut but not the flavor of the coconut. Still yummy!

Quick question. Can I use bottled lime juice instead (of course I’d still buy a few limes for the grate)? I’ve made lime curd before for a Pavlova and although it was great, it can get quite expensive, same with lemons (last two Pavlova’s I made I spent $10.00 just on the lemons needed!) Thankfully hubs bought and is in the process of planting a lemon and lime tree but as you can imagine, it’s going to be a while before I can actually get any use out of them.

oh, this looks so delicious!! and pretty easy to make too. I’d have to make it for a pot luck or a party, otherwise I’d sit at home and eat the entire batch.
