Hi Frank!

You can totally omit it. I didn’t have it sitting around but I do buy it and use it when I make pina coladas. I really wanted to make sure I had a balanced flavor from the strawberries and the coconut. I wanted to make sure you could taste the coconut hence why I used both coconut milk and water. Hope that answers your question!

Who has coconut water sitting around the house? Still going to try the recipe, but even here in Canada, our thai coconut “milk” has both water and thick crème in the same can. Love your blog!!
