Grinder Sandwich (TikTok Viral Salad Sandwich)

Ingredients

Grinder Salad Dressing

  • 1/4 red onion thinly sliced
  • 1/3 cup mayonnaise
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon Italian seasoning I used Penzey's frozen pizza seasoning
  • 1 to 2 Tablespoons banana peppers chopped with juice
  • 4 to 5 cloves minced garlic
  • dash crushed red pepper optional
  • salt
  • pepper
  • 1/4 to 1/3 head iceberg lettuce sliced

Grinder Sandwich

  • 2 to 3 sub rolls
  • sliced ham
  • salami
  • Munster cheese
  • 1 tomato sliced
  • grated Parmesan cheese

Instructions

Grinder Salad Dressing

  • Slice your red onion and place in a small bowl with cold water. Set aside.
  • In a medium-sized mixing bowl, add mayo, red wine vinegar and Italian seasoning.
  • Remove onions from water and allow to drain.
  • Add the onions, banana peppers, garlic and crushed red pepper, if you're using. Mix together and then add salt and pepper and mix again.
  • Add lettuce and mix together. (If you're making this a day ahead of time, don't mix the lettuce in until you're ready to serve.)

Grinder Sandwich Assembly

  • Turn your oven on to the broiler setting.
  • Cut into your sub rolls and place on a lined baking dish.
  • Add ham and then salami to your sub rolls. Then, add the Munster cheese.
  • Place in the oven until the cheese has melted and is bubbly, about 1 to 3 minutes. Be careful and don't burn your bread!
  • Add sliced tomatoes on top and then season the tomatoes with salt and pepper.
  • Scoop the mixed grinder salad dressing on top of the sandwich and then add the Parmesan cheese.
  • Close the sub roll up and cut in half and serve immediately.

These little bagel balls are so popular because they taste amazing and they are an easy on the go breakfast or snack, essentially it's a cream cheese filled bagel, think bagel balls stuffed with cream cheese.

Can you see the cream cheese? No need to slice your bagel or spread cheese on it because it's cream cheese stuffed bagel bites!

Can you freeze stuffed bagel bites?

You can totally freeze bagel bites after making them. I put them in a zippered plastic bag. Always label when you're freezing food, add the date and what's in the bag! (This makes your life easier later on!)

To reheat them, I defrosted them in the refrigerator overnight and heated them up in the oven at 350 degrees F for about 5 to 6 minutes.

Ingredients for making stuffed bagel bites

  • Rhodes Bake N Serve Yeast Dinner Rolls (these are located in your grocer's freezer section)
  • cream cheese
  • baking soda
  • one egg white
  • your favorite bagel toppings (I used sesame seed, everything bagel seasoning and shredded asiago cheese)

I love love Rhodes frozen Yeast Dinner rolls, I have made pretzel rolls with them as well as cheddar cheese cloverleaf rolls. I have baked them up according to the directions on the back of the bag and used the rolls as slider burger rolls and buns for pulled pork sliders too!

How to make stuffed bagel bites

Spray a baking sheet with nonstick cooking spray and place frozen Rhodes Bake N Serve Yeast Dinner Rolls on it.

Spray a sheet of plastic wrap with the cooking spray and allow the rolls to defrost for 2 hours on the counter.

Cut up the cream cheese into four even pieces and cut each piece into 4 more pieces.

One by one, cut each roll in half using kitchen shears.

Flatten just a little bit (as pictured above).

Place a piece of cream cheese in the middle.

Wrap the dough around it and keep pinching the dough to seal it. Be sure to seal it up nicely so the cream cheese doesn’t burst out of the bagel balls while baking.

Allow the rolls to rest on the same prepared baking sheet for 45 to 60 minutes (rewrap with the sprayed plastic wrap).

Bring a pot of water to a boil. Heat your oven to 400 degrees F.

Once it’s boiling, carefully add the baking soda. Turn the heat down to medium. The water needs to be hot but it’s better if it’s not continually boiling for this next step.

Add a few rolls at a time to the pot and allow to cook for 15 to 30 seconds.

Remove with a slotted spoon and drain on a paper towel lined plate or baking sheet.

Brush each roll with the beaten egg white. Add toppings to each bagel bite.

I used sesame seed on a few. Everything bagel seasoning on some of them.

After baking for 17 to 18 minutes, here's how they look!

Stuffed Bagel Bites Recipe

Servings 16 bagel bites

Ingredients

Bagel Toppings

  • Sesame seed
  • Everything bagel seasoning
  • Shredded asiago cheese

Instructions

Last week I was in Portland and for a few days the week before that I was in Seattle. Portland was for work. It was really good to see some of my co-workers and even meet a few for the very first time. Since I work from home, I hadn't gotten to meet some members of my team. It was awesome to get to hang out with them and I ate very well and even hung out with an awesome friend.

I was in Seattle before Portland for the BlogHer Food conference. I had a lot of fun eating, meeting new friends and seeing old friends.

While I was in Seattle, I got these panic texts from Curtis, the washer was broken or he actually said “I broke the washer”. He thought he had overloaded it but I kept texting back saying I'm sure it's just old. It was really really old.

Fast forward to last week (or wait rewind), and I get a text message from Curtis with a photograph of some chicken lo mein. He had made a frozen dinner and he said he couldn't wait for me to come home to make dinner again.

It was so sweet and before you go thinking, he should be able to make his own dinner. He should and he would but he is currently beyond stressed out halfway through a year-long online certificate program for GIS (he makes maps for a living). All his idea and his company is covering the costs. He regrets it about every other day because he remembers how much he disliked school. I can go on and on about this.

I felt terrible, I left for a week and a half and he has to deal with the puppy, a broken washer, work and school on top of all of it. I promised I would make this cheese steak sandwich recipe and DoubleTree cookies when I came home.

But not the day I came home though; it was a red eye flight. NO MORE red eyes for me. I just can't hack it. I don't sleep very well on planes due to my sleep apnea…I don't know why I tried it for so long but no more.

The second day after I came home, I made these cheesesteaks. This is Curtis' perfected recipe. We have been making this for a few years now. We used to make it with sliced roast beef and one day, my former co-worker Kevin, said that Philly cheesesteaks were made with ribeye…that was enough for Curtis to want to give it a try.

And perfection.

How to Make Philly Cheese Steak

Slice the beef ribeye steaks across the grain in thin slices. Once sliced, rough chop all of the beef several times going in rows and then columns. You want to have small pieces of beef when you're done so your cheese steaks are easy to eat!

In a heated non-stick skillet with 1 tablespoon butter, cook the mushrooms and half of the onions.

All done! Remove mushrooms and onions from the pan and put them on a plate for now.

I wipe the pan out with a paper towel and add 1/2 tablespoon of butter and saute the peppers and onions.

All done! Remove the onions and peppers from the pan and add to the plate with mushrooms & onions or onto a separate plate depending on preference.

Once again, I wipe the pan with a paper towel and add 1 tablespoon of butter. Add half of the ribeye steak and cook just 2-4 minutes.

Then, add the onions & peppers or if using all of the ingredients – half of the onions/peppers/mushrooms mixture. Cook for 1-2 minutes and then divide in half.

Now the cheesesteak magic happens! Add cheese on top. Curtis likes to mix up Provolone and Muenster cheeses so you'll see them above.

Allow the cheese to melt and add to sliced hoagie rolls. More pictures on that below!

Once again, I wipe the pan thoroughly especially the cheese so it doesn't burn. Add 1 tablespoon of butter and the 2nd half of the ribeye to the pan. Cook for 2-4 minutes and then add back the onions and mushrooms or the remaining veggies. Divide in half as pictured above.

I prefer provolone only. Add the cheese on top!

How to Reheat Cheesesteak

Roll them up tightly in foil. These pictures don't really show you how small we roll them up. The diameter of the cheesesteak ends up being almost half of the diameter of the hoagie roll originally.

Put them into the oven at 250 degrees and allow the meld to happen for about 10-15 minutes. (Don't you just love my blue oven? I had no ideas that ovens could be different colors inside. For the record, I'm using the top oven of my KitchenAid double oven range.) To reheat cheesesteak sandwiches, you'll pop them in the oven for just a little bit longer.

What you end up having is cheesy, greasy goodness. The hoagie is not too soggy but wet enough from the juices from the meat and beat up looking from being tightly rolled. It is perfect. Oh and I had my cheesesteak with a root beer float and some chips. Total perfection.

I like to give Curtis a hard time for what he likes to cook (hot dogs, chili and chili cheese dogs, see the pattern?) – he doesn't cook much and he said the other day, never in a million years did he think I was ever going to blog one of his recipes. I guess I need to do it more often, huh?

*Just a note: this recipe is based on both of our preferences. I prefer mushrooms and onions on my cheesesteaks and Curtis prefers green peppers and onions. If you want green peppers in all four cheesesteaks – increase the amount of bell peppers to a whole bell pepper. The amount of mushrooms can stay the same or be increased just as well.

Cheesesteaks

Use two ribeye steaks for this cheesesteak recipe and you can't go wrong.
Prep Time 35 minutes
Cook Time 50 minutes
Servings 4 sandwiches

Ingredients

  • 4 hoagie rolls sliced (We love the Publix hoagie rolls!)
  • 1/2 green pepper sliced
  • 1 large white onion cut in half and sliced thick
  • 8 oz mushrooms sliced
  • 1.25 to 1.5 pounds beef ribeye steaks sliced thinly across the grain and then chopped roughly again so they are small pieces
  • salt & pepper
  • 3 1/2 Tablespoons salted butter
  • 8 slices of cheese Provolone or Muenster

Instructions

  • Prepare 4 sheets of foil and slice the hoagie rolls and set aside. Preheat oven to 250 degrees.
  • Heat a non-stick skillet with 1 Tbsp butter on medium high heat. Add mushrooms and half of the onions and cook 5-8 minutes or until mushrooms are browned and onions are cooked down. Remove and place on a plate.
  • Wipe the skillet with a paper towel and add 1/2 Tbsp of butter and return to the stove. Cook remaining onions and bell peppers for 5-8 minutes or until peppers start to brown and blister and the onions are cooked down. Add to a separate plate (unless everyone likes peppers/onions/mushrooms then add to the plate with mushrooms & onions).
  • Wipe the skillet again with a paper towel and add 1 Tbsp butter and return to stove again. Season half of the steak with salt & pepper and add to the skillet. Reduce to medium heat and cook for 2-4 minutes. Add in peppers & onions or half of the veggie mixture and cook for 1-2 minutes. Divide the meat & veggies in half as pictured above. Add 4 slices of cheese on top and allow the cheese to melt for 1-2 minutes.
  • Add the cooked meat & veggies and melted cheese to two hoagie rolls. Inside one sheet of foil, roll the hoagie roll tightly and place inside the oven for 10-15 minutes.
  • Repeat the process with the remaining steak & veggies or like I did with the mushrooms and onions – for the last two hoagie rolls. Serve fresh out of the oven with chips or your favorite French fries.

Notes

Notes: If you have leftovers (if that's possible), refrigerate inside a zippered plastic bag inside (don't remove it from the foil). Reheat the cheesesteaks in the foil in a 350 degree oven for 20-25 minutes.

*Okay another note, I didn't call these Philly cheesesteaks okay? I have never had a cheesesteak in Philly even though I have been to Philly before (as a kid). I have only tasted a cheesesteak made at supposedly authentic shops here in Florida. Hope these are close but I know it's inevitable someone will say, these aren't anything like the original! And there's no way they can be since we don't have access to those amazing Amoroso rolls.

Edited to add: I am able to purchase Amoroso rolls at Aldi and it's the best way to make this cheesesteak recipe!

First, off the Cabot cheese I used are:

  • yellow Vermont Extra Sharp
  • white Vermont Sharp (it's hard to say which one is your favorite, right? This one might be in the top five!)
  • Pepper Jack (this one is so nice and has a kick from the peppers, it's perfect for these nachos!)

Did you know that all Cabot Cheddars are naturally lactose-free? This is awesome for me because I'm becoming more lactose intolerant. I love that I still get to enjoy Cabot Cheddar cheese!

Sheet Pan Chicken Nachos

Servings 4 to 6

Ingredients

  • 1/2 pound chicken tenderloins
  • 1 Tablespoon olive oil
  • 2 teaspoons homemade taco seasoning
  • 1/2 to 1/3 cup canned black beans drained and rinsed
  • tortilla chips
  • 4 ounces Cabot Vermont Extra Sharp Cheddar Cheese grated
  • 4 ounces Cabot Vermont Sharp Cheddar Cheese grated
  • 4 ounces Cabot Pepper Jack Cheese grated

To Serve:

  • 1 tomato diced
  • 1 jalapeno cut in half and sliced thinly
  • 1 green onion sliced thin
  • homemade guacamole (or it can be store-bought)
  • Cabot Sour Cream
  • homemade salsa (or it can be store-bought)

Instructions

  • Heat oven to 425 degrees F. Remove chicken from packaging and drizzle olive oil on top. Add taco seasoning on both sides of chicken. Place on a baking sheet and bake for 15 minutes (flipping chicken over halfway). Remove baking sheet and allow chicken to rest for 5 minutes. Cut chicken into bite sized pieces.
  • While the chicken is cooking, grate the cheese and prep the tomatoes, jalapeño, green onion, guacamole and salsa.
  • Lower the oven to 375 degrees F. Add tortilla chips to the same baking sheet and sprinkle grated cheese on top. Sprinkle chicken and black beans over the tortilla chips and add the remaining cheese. Bake for 7 to 8 minutes at 375 degrees F.
  • Remove the baking sheet from oven and top with diced tomatoes, sliced jalapeños and green onions. Serve with guacamole, sour cream and salsa.

Notes

Notes: If preparing ahead of time, you can cook the chicken in the oven a few days in advance and cut it up. Store in a sealed container and when you’re ready to make the nachos, remove from the fridge and follow the rest of the recipe!

This is how I cook quesadillas! So you have some sealed edges…this was Curtis' genius idea years ago.

Add the cheese and mushrooms.

Then, the onions, peppers and then shrimp and then add more cheese!

I know you want these and I know you want to make them! If you don't like the mushrooms, you can totally omit them!

Serve with a squeeze of lime, sliced avocado, salsa and sour cream and you're golden. So easy to make…let me know if you make them!

Shrimp Quesadillas

Ingredients

  • 7 to 8 pieces of shrimp peeled and deveined
  • 5 to 6 mushrooms cleaned and sliced
  • 1/4 green pepper sliced into strips and then cut in half
  • 1/4 yellow onion peeled and sliced
  • 1/2 jalapeno seeds and ribs removed, sliced
  • grape seed oil or olive oil
  • 1 Tablespoon butter
  • 2 medium-sized flour tortillas
  • 6 Tablespoons cheddar or monterey jack cheese
  • sliced avocado sour cream, homemade salsa (for serving)

Instructions

  • Peel and clean the shrimp. Slice in half length-wise. Using a paper towel, dry off the shrimp.
  • Put 1 teaspoon oil into a non-stick skillet and cook the mushrooms on medium heat for about 5 to 6 minutes. Remove mushrooms and set aside. Wipe down the pan with a paper towel.
  • Next, add 1 teaspoon oil into the pan along with the green pepper, yellow onion and jalapeño. Cook on medium heat for about 3 to 4 minutes. Remove vegetables from the pan and set aside. Wipe the pan again with a clean paper towel.
  • Melt 1/2 Tablespoon of butter in the pan on medium heat. Season the shrimp with salt and pepper and add them to the pan and cook for 60 to 90 seconds on each side. Remove from the pan.
  • Melt another 1/2 Tablespoon of butter in the pan and add 2 tortillas to the pan, half of each touching the bottom of the pan. Put 1 Tablespoon of cheese and half the of the mushrooms on each tortilla, along with half of the onions and peppers. Then add the shrimp and 2 Tablespoons of cheese on each tortilla.
  • Close the tortilla and continue cooking for about 2 minutes. Flip over and cook for 3 to 4 minutes, until the desired doneness on the inside and outside.

First, set a pot of water to boil for the gnocchi.

Then, prep the kale. I remove the leaves from the stems.

Then, I cut them into bite-sized pieces.

Get all of the ingredients together…including your Roth Cheese Mac and Cheese blend.

Melt the butter on medium heat.

Allow the butter to cook a little longer, about 3 to 4 minutes to brown it. Can you see the brown specks?

Add flour to make your roux.

Add the milk and whisk.

Add salt, pepper and the other spices. Then, add the cheese and mix until it's melted.

Then, add the kale and corn. This brightens the mac & cheese and balances it out.

Brown Butter Gnocchi Mac & Cheese with Kale and Corn Recipe

Ingredients

  • 16 ounce package gnocchi
  • 5 kale stems
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons unbleached all-purpose flour
  • 1 1/4 cups milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon ground mustard
  • pinch of ground nutmeg
  • 6- ounce bag Roth Ultimate Mac n Cheese Blend about 1 1/2 cups cheese
  • 1 cup fresh or frozen corn

Instructions

  • Bring a pot of water to boil. Follow instructions on package to cook the gnocchi.
  • Remove kale leaves from the stems and chop into bite-sized pieces.
  • Add butter to a small pot and allow the butter to melt and brown. Browning the butter should take 3 to 5 minutes after it melts. Be careful to not let it burn.
  • Add flour to the butter and mix well with a spatula, cooking for about 2 minutes. Gradually pour in the milk and whisk. Cook the sauce for 2 minutes until it thickens, whisking occasionally. Add salt, pepper, ground mustard and ground nutmeg and whisk. Add the Roth Ultimate Mac & Cheese blend, turn the heat down to low and stir until melted.
  • Add the kale and corn to the cheese sauce and mix. Once the kale has cooked down, about 2 to 3 minutes, add the gnocchi and mix. Serve immediately.
